(More customer reviews)The Messermeister Meridian Elite knives are sharp, and beautiful!The set is incorrectly listed though, it does not include a carving knife and fork.Instead there is a 7in santoku and 5in serrated knife. (BE AWARE!!!)My only complaint is the block has some larger than needed slits, an not well organized.I have seen better blocks.I spent many hours comparing knives - Rockwell hardness, weight, balance, rating, ect...These knives are not too heavy or too light.The handles are not fancy, too small or too big. I looked at Wustoff Classic, Shun Classic, Henkel Four Star and Twin Cuisine.I purchased these knives based on an excellent cult reputation, a desire to have something different, and of course price versus quality.If you want a good set of knives and the brand name at a good price buy the four star.If you like heavy knives buy the Twin Cuisine.If you want the sharpest hardest knife and not worried about price buy the Shun.If you want a knife set that is top notch, lesser known (usually better price), a perfect set for life (you get everything you need just pick up a 10in carver an a fork), get these knives.Messermeister Meridian!!!
These knives have a 15 degree blade. (Same as Shun, Henkel's are 18 degree, razor blades are 4).The Rockwell hardness of 56-57 (same or better than Henkel's, Shun is 60-61).These knives have polished edge a tapered bolster which is comfortable to use against your index finger while allowing for easy re-sharpening over years of use.Good product and great looking.
